Kale, a biennial herbaceous plant, is a horticultural variety of edible kale (cabbage, pak choi). After one year of cultivation, the plant forms a rosette-like leaf cluster. After experiencing low temperatures in winter, it blooms and sets fruit in the following year. The terminal raceme inflorescence blooms from April to May, with insect-pollinated flowers. The fruit is a silicle, flat and round, with spherical seeds that are brown and weigh about 4 grams per thousand. Horticultural varieties have diverse forms; they can be categorized by height into tall and dwarf types; by leaf shape into crinkled, non-krinkled, and deeply lobed varieties; and by color, with marginal leaves in jade green, dark green, gray green, and yellow green, while central leaves come in pure white, light yellow, flesh color, rose red, and purple red varieties.
